Many chose the Dominican Republic because its climate and soil are so similar to Cuba, making it the perfect location for restarting production. The Alvarez family doesn't currently own a distillery, but they do have a long term contract with a company in Santiago to distill their rum. The rum is aged in oak barrels using the solera system.
