Fermentation begins at low temperatures for 10 days, gradually increasing to 24C to preserve the fruity aromas and prevent excessive tannin extraction. The wine then remains on the skins for 7 days to extract the color and preserve the black fruit aromas. The wine is aged in French and American oak barrels for 8 10 months.
