The caption writes, "These vats, of which Hiram Walker has twenty four, hold 120,000 gallons each. Temperatures are automatically controlled, and the vats sealed against wild yeast in the air, which could otherwise spoil a batch in short order. After each run the round sides of the vats are sterilized with live steam." Photography by Fred Korth. CONDITION This
